MDC hosting Hank Shaw at Discovery Center in KC
Kansas City, Mo. – The Missouri Department of Conservation (MDC) will host a free presentation on wild game and fish cooking by Hank Shaw 7 to 8 p.m. on Monday, Dec. 12, at the Gorman Discovery Center in Kansas City. Shaw is a noted book author and blogger on wild game cooking.
“If you are interested in eating wild game or fish, or foraged edibles, he is a foremost authority,” said James Worley, MDC education specialist.
Shaw is a 2013 James Beard Award winner for best food blog. His latest book is Buck, Buck, Moose: Recipes and Techniques for Cooking Deer, Elk, Moose, Antelope and other Antlered Things. His previous books include Hunt, Gather, Cook and Duck, Duck, Goose.
“He has revolutionized the way I cook and eat duck,” Worley said. “I now know that duck skin is a delicacy and it tastes like bacon. I now cook duck more like a steak, rather than like a roast.”
Shaw enjoys teaching both traditional and more exotic wild game recipes. Some of his venison dishes include Venison Tripe Neapolitan, Peruvian Grilled Deer Heart, and Venison Agnolotti pasta.
Copies of Shaw’s latest book will be available for purchase at the Discovery Center Nature Shop, and a book signing will be offered after his presentation.
